Thai Chicken Rice (or khao man gai)

Thai Chicken Rice, or Khao Man Gai is one of the most common street foods in Thailand.  You will find this very similar to the popular Chinese Hainanese Chicken Rice.

Thai Chicken Rice

     Prep Time: 10 minutes

     Cook Time: 30 minutes

     Servings:     2


      Ingredients:

  • 300 gm boneless chicken breast
  • 5 cups Water
  • 2 tsp salt
  • 1 tsp sesame oil
  • 3 pcs coriander root
  • 1 cup rice, rinsed
  • 2 tsp grated ginger root
  • 3 garlic cloves, crushed
  • 2 tbsp vegetable oil
  • 1 cup sliced cucumber
  • 1/4 cup coriander leaf
Preparation
  1. Simmer the chicken in water with the salt, sesame oil and coriander root until the chicken is soft. (about 30 minutes)

  2.  Remove the chicken from the stock and keep aside.

  3. Strain the stock into a pot and add the rice, ginger, garlic and vegetable oil.  Cook the rice until tender.

  4. Slice the chicken breast and place on top of the rice, garnish with the cucumber and coriander leaves.
